Ryo ~Coolness~
A colorful Japanese course that reflects the fun and sparkle of summer. The appetizer is a dish of Gurukun, Okinawa's prefectural fish, with watershield, kiwi, aloe, and tomato. A refreshing taste perfect for the beginning of summer spreads throughout your mouth. Fireflies dance and river crabs play - for the appetizer, a small summer scene is depicted in a bamboo basket. We deliver coolness to your five senses, weaving together playfulness and refreshing tastes with items like hotarukan (firefly squid), river crabs, frog-shaped cucumber with miso, and kasaba (shell) sushi. For the "shinogi" course, we have prepared Okinawa mozuku seaweed, rich in the scent of the sea, and mozuku noodles with a smooth, refreshing texture. The soup is a pumpkin shinjo made with pumpkins harvested from our own Kanucha Resort farm. It is a bowl with a gentle sweetness. In addition, please enjoy a cool and gorgeous Japanese moment that will remain in your summer memories, with fresh sashimi of Okinawan Sugi, tuna, and squid nurtured by the Okinawan sea, and a hearty beef hot pot.
